Simple Chicken With Roasted Garlic Sauce is a comforting dinner made with tender golden chicken and a smooth sauce packed with mellow roasted garlic flavor. Roasting the garlic makes it soft and slightly sweet, creating a rich sauce that pairs beautifully with chicken.
Ingredients
- 1½ lbs boneless, skinless chicken breasts
- 1 whole garlic bulb
- 2 tablespoons olive oil
- 2 tablespoons butter
- ½ cup chicken broth
- ½ cup heavy cream
- ½ teaspoon Italian seasoning
- ¼ cup grated Parmesan cheese
- Salt and black pepper, to taste
- 1 tablespoon fresh parsley, chopped
Instructions
- Roast the garlic: Preheat the oven to 400°F (200°C). Slice the top off the garlic bulb, drizzle with a little olive oil, wrap in foil, and roast for 30–35 minutes until the cloves are soft and golden. Let it cool slightly, then squeeze the roasted garlic cloves from the bulb.
- Cook the chicken: Season the chicken with salt, black pepper, and Italian seasoning. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Cook the chicken for 5–6 minutes per side until golden and cooked through. Remove and set aside.
- Make the sauce: Melt the butter in the same skillet. Add the roasted garlic and gently mash it into the butter. Pour in the chicken broth and heavy cream, stirring until smooth.
- Add Parmesan: Stir in the Parmesan cheese and simmer the sauce gently for 3–4 minutes until slightly thickened. Taste and adjust the seasoning if needed.
- Finish the chicken: Return the chicken to the skillet and spoon the roasted garlic sauce over the top. Simmer for another 2–3 minutes so the chicken absorbs the flavor.
- Serve: Garnish with fresh parsley and serve hot with mashed potatoes, pasta, rice, or roasted vegetables.
