This Simple Chicken Stew is a warm and comforting meal made with tender chicken, potatoes, carrots, and peas in a flavorful broth. It is easy to prepare in one pot and makes a hearty dinner for cozy evenings.
Ingredients
- 1½ lbs boneless, skinless chicken thighs, cut into bite-sized pieces
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 3 carrots, sliced
- 3 medium potatoes, peeled and cubed
- 2 cloves garlic, minced
- 3 cups chicken broth
- 1 cup frozen peas
- 1 tablespoon tomato paste
- 1 teaspoon dried thyme
- ½ teaspoon paprika
- Salt and black pepper, to taste
- 2 tablespoons all-purpose flour
- 1 tablespoon chopped fresh parsley
Instructions
- Season the chicken: Season the chicken pieces with salt, black pepper, and paprika.
- Brown the chicken: Heat olive oil in a large heavy pot over medium-high heat. Add the chicken and cook for 5–6 minutes, stirring occasionally, until lightly browned. Remove and set aside.
- Cook the vegetables: Add the onion and carrots to the same pot. Cook for 3–4 minutes, then add the garlic and cook for another 30 seconds.
- Build the stew: Stir in the flour and tomato paste. Slowly pour in the chicken broth while stirring to prevent lumps. Add the potatoes and dried thyme.
- Simmer: Return the chicken to the pot. Bring the stew to a gentle boil, then reduce the heat, cover, and simmer for about 20 minutes, or until the potatoes and chicken are tender.
- Finish and serve: Stir in the frozen peas and cook uncovered for another 3–4 minutes. Taste and adjust the seasoning, then garnish with fresh parsley and serve warm.
